Canapé & Finger Food Menu

Please note that all of the food that we produce is made using the freshest ingredients and to home made recipes. We make all the food ourselves, and therefor have control over the flavours, size and aesthetics of our culinary delights!

Vegetarian:

Smoked cheddar and sweet chutney served on Scottish oat cake
Feta cheese with a spiced gooseberry chutney served on paprika shortbread
Red onion jam, goat’s cheese and rockit wrap
Blue cheese and leek quichette
Roasted balsamic cherry tomatoes and fresh basil served on grilled ciabata

Meat:

Chorizo and fresh guacamole served on savoury tartlet
Crispy duck pancakes with spring onion and a hoi sin sauce
Cajun chicken goujons with herbed yoghurt dip
Rare roast angus beef on foccacia, topped with a fresh basil pesto
Beef skewers glazed in soy and sesame seeds with fresh mint and coriander
Crombies cocktail sausages with a caramelised shallot and tomato dip

Fish:

Smoked Scottish salmon cheesecake
Thai marinated prawns with fresh coconut, lemongrass and chilli tartlet
Scottish salmon on bilinis with a lime and caviar topping
A selection of fresh sushi
Creamed smoked haddock and whole grain mustard and wilted on sourdough

Sweet:

Double chocolate hazelnut brownies
Mini tart tatin
Dark chocolate cups with creamed fruit

Cold Fork Buffet

Platters:

Selection of British cold meats, to include: carved leg of lamb, honey roasted ham, rare roast beef, served with a selection of homemade condiments. £8.00 per head

Selection of Continental cold meats, to include: Parma hams, salami and mortodella served with pickled vegetables and marinated olives. £10.00 per head

Ian Mellis cheeseboard, to include, a blue cheese, a soft cheese and a hard cheese served with a selection of biscuits, quince jelly and fruit. £8.00 per head

Platters…centre piece of the buffet display, beautifully presented, best served with a selection of salads and breads for a sophisticated occasion.

New potato salad with chopped chives and fresh lemon
New potato salad with smoked paprika, crème fraiche and basil oil drizzle
Classic herb and green leaf salad with croutons

Hot Fork Buffet

Aubergine, courgettes and braised cashew nut mousakka
Wild mushroom, parmesan and fresh basil risotto

Tuscan chicken with roasted peppers and artichokes, tomatoes and olives
Beef casserole with roasted vegetables in a rich red wine sauce
Moroccan lamb tagine with apricots, spiced lemon and sweet peppers

Hot Buffets…Delicious hot food served from chafing dishes, again best served with a selection of salads and bread for a well-balanced meal!

Starters

Toasted pine nuts, artichoke, feta cheese and fresh pea salad with raspberry vinaigrette set on a crisp filo parcel
Scottish salmon gravaldax served with brown malted bread
Venison terrine with an apple, pear and chilli chutney served with rough oatcakes
Crispy beef and pancetta salad with french beans, balsamic cherry tomatoes and a sweet chilli dressing
Creamed and lightly spiced haggis filo parcel with a rich drambuie drizzle

Mains
Served with a choice of potatoes, and chefs selection of seasonal garden vegetables

Braised aubergine, roasted peppers and goats cheese stack served with a spice mango salsa
Grilled herb polenta with wild porcino mushrooms, asparagus and gorgonzola, drizzled with a fresh basil pesto
Pan seared escalope of salmon with a sundried tomato and parmesan crust
Corn fed chicken breast with a chanterelle mushroom mouse set on a rice timbale with a tarragon cream sauce
Poussins roasted with fresh garlic, mustard and sage set on buttered parsley mashed potatoes with a white wine jus
Pan-fried breast of duck with a plum and port coulis set on a sweet potato mash
Angus fillet of beef served with baby shallots, pancetta and wild mushrooms, laced with a burgundy sauce
Rosemary roasted lamb shanks, served with roasted root vegetables and a fresh mint sauce

Sweets

Tart tatin served with creamy prune and cognac sauce
Dark chocolate and mocha tart served with whipped cream and an orange salad
Vanilla crème brulee served with macadamia nut biscuit

Fine dinning…A splendid affair! Traditionally more formal than buffets, waiting staff serve guests as they relax and enjoy the meal! Menus are designed very specifically to suit individual tastes and budgets. Consultations are provided, and tastings given.
